The taste of Arctic Char can be described as a cross between salmon and trout, but more flavourful. Wild Arctic Char are an oily fish resulting in a superior taste that is not as fatty as salmon and less gamey than trout tends to be. When fillets are grilled, baked or broiled, the meat lightens in colour and the mild, natural flavour is released. Smoked char becomes a transparent shade of vivid pinkish-red with a texture that melts in your mouth.
